Description

Delicious and nutritious breakfast burritos filled with eggs, sausage, and tater tots, perfect for busy mornings.


Ingredients

  • 1 lb frozen tater tots (about 3 cups)
  • 1 lb ground turkey or pork breakfast sausage
  • 2 teaspoons olive oil
  • 1 diced bell pepper (about 1 cup)
  • 1/2 small yellow onion (finely diced, about 1/2 cup)
  • 12 large eggs
  • 1 cup shredded cheddar cheese (optional)
  • 10 10-inch burrito size flour tortillas (gluten-free if needed)

Instructions

  1. Preheat the oven and bake tater tots according to package directions.
  2. In a medium skillet over medium-high heat, cook the breakfast sausage until done, about 7 minutes. Remove and set aside.
  3. In a separate large skillet, heat olive oil and sauté the bell pepper and onion until tender, about 6 minutes.
  4. Whisk the eggs in a bowl and pour them into the skillet with the vegetables, stirring until just set, about 3 to 5 minutes.
  5. Fold in the cooked sausage and let the mixture cool for about 10 minutes.
  6. Microwave tortillas wrapped in damp paper towels for 15-20 seconds to soften.
  7. Assemble each burrito with 1 cup of the egg mixture, 4 tater tots, and cheese if using.
  8. Fold and roll the tortillas tightly to secure the filling.
  9. Wrap each burrito in parchment and then foil for freezer storage.

Notes

For a crispy exterior after reheating, toss in a hot skillet for a few minutes before serving. Experiment with different fillings for a unique taste.
