Ingredients

- 1 lb frozen tater tots (about 3 cups)
- 1 lb ground turkey or pork breakfast sausage
- 2 teaspoons olive oil
- 1 diced bell pepper (about 1 cup)
- 1/2 small yellow onion (finely diced, about 1/2 cup)
- 12 large eggs
- 1 cup shredded cheddar cheese (optional)
- 10 10-inch burrito size flour tortillas (gluten-free if needed)
Instructions
- Preheat the oven and bake tater tots according to package directions.
- In a medium skillet over medium-high heat, cook the breakfast sausage until done, about 7 minutes. Remove and set aside.
- In a separate large skillet, heat olive oil and sauté the bell pepper and onion until tender, about 6 minutes.
- Whisk the eggs in a bowl and pour them into the skillet with the vegetables, stirring until just set, about 3 to 5 minutes.
- Fold in the cooked sausage and let the mixture cool for about 10 minutes.
- Microwave tortillas wrapped in damp paper towels for 15-20 seconds to soften.
- Assemble each burrito with 1 cup of the egg mixture, 4 tater tots, and cheese if using.
- Fold and roll the tortillas tightly to secure the filling.
- Wrap each burrito in parchment and then foil for freezer storage.
Notes
For a crispy exterior after reheating, toss in a hot skillet for a few minutes before serving. Experiment with different fillings for a unique taste.
