Ingredients

- 1 bunch kale, chopped
- 1 can white beans, drained and rinsed
- 1 pound sausage, sliced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat until shimmering. Add onion, carrots, and celery; sauté until softened, about 6-8 minutes.
- Stir in garlic and cook for another minute.
- Add sausage and cook until browned, breaking larger pieces slightly.
- Pour in broth and bring to a simmer, scraping up browned bits from the pot.
- Add kale, white beans, thyme, and rosemary; cook for 15-20 minutes.
- Season with salt and pepper before serving.
Notes
Let the soup rest off heat for 10 minutes before serving to allow flavors to marry. Add a spoon of good-quality extra virgin olive oil before serving for enhanced flavor.
