A cozy and savory Puerto Rican bean stew made with black beans, tomatoes, and a flavorful sofrito base, perfect for any weeknight dinner.

- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 2 cans (15 ounces each) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes
- 2 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- 2 cups fresh spinach, roughly chopped
- 1/4 cup fresh cilantro, chopped (for garnish)
- Lime wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat and add the diced onion and bell pepper. Sauté for about 5 minutes until softened.
- Add the minced garlic, ground cumin, dried oregano, smoked paprika, and cayenne pepper (if using), cooking for 1 to 2 minutes until fragrant.
- Next, add the drained and rinsed black beans and the can of diced tomatoes, stirring to combine.
- Pour in the vegetable broth and add the bay leaf. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 20 minutes.
- Remove about one cup of beans and mash them roughly with a fork. Stir the mashed portion back into the pot to thicken the stew.
- Taste and season with salt and pepper, adjusting acidity with lime juice if needed. Remove the bay leaf.
- Stir in the chopped spinach and cook for another 2 to 3 minutes until wilted.
- Serve hot, garnished with fresh cilantro and lime wedges on the side.
Notes
For added depth, sauté a small spoonful of tomato paste with the aromatics. Store leftovers in airtight containers for up to 4 days, or freeze for up to 3 months.
