Description
A comforting one-pot dish featuring tender rice and warmed beans with a fragrant sofrito base.
Ingredients

- 2 cups white rice
- 1 can black beans (or pinto beans), drained and rinsed
- 1/4 cup sofrito (homemade or store-bought)
- 1 packet sazon seasoning
- 4 cups vegetable broth or water
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft and the onion is translucent.
- Stir in the sofrito and cook for an additional 2-3 minutes.
- Add the rice and sazon seasoning, stirring to combine.
- Pour in the vegetable broth or water and bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.
- Stir in the drained beans, seasoning with salt and pepper to taste.
- Serve hot and enjoy your comforting Puerto Rican rice and beans.
Notes
For added brightness, garnish with an extra spoonful of sofrito.
