- 6 large eggs (hard boiled)
- ¼ cup mayonnaise
- 1 teaspoon yellow mustard
- 1 teaspoon white vinegar
- 1 drop red food coloring (optional)
- Salt and pepper (to taste)
- Fresh chives (cut into small pieces)
- Smoked paprika (for garnish)
Instructions
- Peel the hard boiled eggs and slice them in half lengthwise. Carefully scoop the yolks into a small mixing bowl and place the egg white halves onto a platter.
- Mash the yolks with a fork until crumbly. Mix in the mayonnaise, mustard, vinegar, salt, and pepper until smooth.
- Add one drop of red food coloring if you want more of a pumpkin color and mix well.
- Transfer the yolk mixture into a piping bag fitted with your preferred piping tip. Pipe the mixture into the egg white halves.
- Use a toothpick to lightly draw lines on the piped mixture to mimic pumpkin shapes.
- Top with sliced chives to act as stems and sprinkle paprika for garnish.
- Chill in the refrigerator until ready to serve.
Notes
Serve on a platter and store leftovers in an airtight container in the fridge for up to 2 days.
