Ingredients
Scale
- 1 bunch kale, chopped
- 1 can white beans, drained and rinsed
- 1 pound sausage (Italian or turkey), sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Sauté the onion and garlic in a large pot over medium heat until translucent, about 6 to 8 minutes.
- Add sausage and cook until browned on the edges.
- Stir in kale, white beans, diced tomatoes, broth, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for about 30 minutes.
- Season with salt and pepper before serving.
- Serve hot with olive oil or Parmesan, and optionally add a squeeze of lemon or red wine vinegar.
Notes
Best served with crusty bread for dipping. Can be stored in the fridge for up to 4 days or frozen for 3 months.
