Description

A rich and comforting bowl of French onion soup filled with caramelized onions and melted cheese, perfect for chilly evenings.


Ingredients

  • 0.5 cup unsalted butter
  • 2 tablespoons olive oil
  • 4 cups sliced onions
  • 5 cups beef broth
  • 2 tablespoons dry sherry
  • 1 teaspoon dried thyme
  • A pinch of salt and pepper to taste
  • 4 slices French bread
  • 4 slices provolone cheese
  • 2 slices Swiss cheese, diced
  • 0.25 cup grated Parmesan cheese

Instructions

  1. Gather all the ingredients.
  2. Melt the butter with olive oil in an 8-quart stock pot over medium heat. Add the sliced onions, stirring continually until they are tender and translucent.
  3. Pour in the beef broth, dry sherry, and thyme, and season with a pinch of salt and pepper. Let this mixture simmer for about 30 minutes.
  4. Preheat your oven’s broiler.
  5. Ladle the soup into oven-safe serving bowls and place one slice of French bread on top of each bowl.
  6. Layer each slice of bread with a slice of provolone, half a slice of diced Swiss, and a tablespoon of Parmesan cheese.
  7. Place the bowls on a cookie sheet and broil in the preheated oven for 2 to 3 minutes, or until the cheese bubbles and turns golden brown.
  8. Serve hot and enjoy!

Notes

For a vegetarian version, substitute the beef broth with vegetable broth. Experiment with different cheeses to find your ideal flavor.
