- 0.5 cup unsalted butter
- 2 tablespoons olive oil
- 4 cups sliced onions
- 5 cups beef broth
- 2 tablespoons dry sherry
- 1 teaspoon dried thyme
- A pinch of salt and pepper to taste
- 4 slices French bread
- 4 slices provolone cheese
- 2 slices Swiss cheese, diced
- 0.25 cup grated Parmesan cheese
Instructions
- Gather all the ingredients.
- Melt the butter with olive oil in an 8-quart stock pot over medium heat. Add the sliced onions, stirring continually until they are tender and translucent.
- Pour in the beef broth, dry sherry, and thyme, and season with a pinch of salt and pepper. Let this mixture simmer for about 30 minutes.
- Preheat your oven’s broiler.
- Ladle the soup into oven-safe serving bowls and place one slice of French bread on top of each bowl.
- Layer each slice of bread with a slice of provolone, half a slice of diced Swiss, and a tablespoon of Parmesan cheese.
- Place the bowls on a cookie sheet and broil in the preheated oven for 2 to 3 minutes, or until the cheese bubbles and turns golden brown.
- Serve hot and enjoy!
Notes
For a vegetarian version, substitute the beef broth with vegetable broth. Experiment with different cheeses to find your ideal flavor.
