- 1 teaspoon dried basil
- ½ teaspoon dried parsley
- ½ teaspoon dried oregano
- ½ teaspoon mustard powder
- ¼ teaspoon pepper
- 1 lb. ground Italian sausage (hot or mild)
- 2 tablespoons butter
- 1 yellow onion, diced
- ½ cup diced carrots
- 2 ribs celery, diced
- 3 cloves garlic, minced
- 3 tablespoons flour
- 1 teaspoon soy sauce
- 1 teaspoon hot sauce
- 5 cups chicken broth
- 1 cup heavy cream
- 1 ¼ lbs. red potatoes, cubed
- 2 cups shredded cheddar cheese (optional)
Instructions
- In a large pot, heat butter over medium heat. Add the Italian sausage and cook until browned. Remove the sausage and set aside, leaving the drippings.
- Add diced onion, carrots, celery, and garlic to the pot. Sauté until softened, about 5 minutes.
- Stir in flour, basil, parsley, oregano, mustard powder, and pepper, cooking for an additional minute.
- Gradually whisk in the chicken broth, then add soy sauce and hot sauce.
- Bring to a simmer and add cubed potatoes. Cook until tender, about 10-15 minutes.
- Stir in heavy cream and cooked sausage, allowing to heat through.
- If desired, sprinkle with shredded cheddar cheese before serving.
Notes
For deeper flavor, brown the sausage longer before adding vegetables. Optionally, add chopped kale or spinach just before serving.
