Description

This Sausage Potato Soup is packed with rich flavors, featuring Italian sausage and tender potatoes, making it a comforting meal perfect for chilly nights.


Ingredients

  • 1 teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon mustard powder
  • ¼ teaspoon pepper
  • 1 lb. ground Italian sausage (hot or mild)
  • 2 tablespoons butter
  • 1 yellow onion, diced
  • ½ cup diced carrots
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 ¼ lbs. red potatoes, cubed
  • 2 cups shredded cheddar cheese (optional)

Instructions

  1. In a large pot, heat butter over medium heat. Add the Italian sausage and cook until browned. Remove the sausage and set aside, leaving the drippings.
  2. Add diced onion, carrots, celery, and garlic to the pot. Sauté until softened, about 5 minutes.
  3. Stir in flour, basil, parsley, oregano, mustard powder, and pepper, cooking for an additional minute.
  4. Gradually whisk in the chicken broth, then add soy sauce and hot sauce.
  5. Bring to a simmer and add cubed potatoes. Cook until tender, about 10-15 minutes.
  6. Stir in heavy cream and cooked sausage, allowing to heat through.
  7. If desired, sprinkle with shredded cheddar cheese before serving.

Notes

For deeper flavor, brown the sausage longer before adding vegetables. Optionally, add chopped kale or spinach just before serving.
