Description

These delightful Cheeseburger Puff Pastry Bites combine flaky pastry with seasoned beef and melty cheese, making them a perfect snack for any gathering.


Ingredients

  • 1 pound lean ground beef (90% or leaner)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1 pinch all-purpose flour for surface dusting
  • 2 puff pastry sheets
  • 1 egg beaten with a splash of water
  • 1 tablespoon olive oil
  • 1 sweet onion finely chopped (about 1 1/4 cup)
  • 1 teaspoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • 1 squeeze fresh lemon
  • 1/3 cup mayonnaise
  • 2 tablespoons ketchup (or more to taste)
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons finely chopped dill pickle
  • 1 1/2 tablespoons pickle brine (or apple cider vinegar)

Instructions

  1. Heat olive oil in a skillet over high heat. Add finely chopped onion, brown sugar, salt, pepper, and garlic powder. Reduce heat to medium/medium-low and cook for about 20 minutes, stirring often. Add water and lemon, deglaze the pan, and cook until liquid is gone.
  2. Mix mayonnaise, ketchup, Dijon mustard, garlic powder, onion powder, salt, dill pickle, and pickle brine in a bowl and refrigerate for the special sauce.
  3. Preheat oven to 400°F. In the same skillet, cook ground beef with salt, pepper, garlic, and onion powder until no longer pink. Drain excess fat, add caramelized onions and 2/3 of cheese, and stir to combine.
  4. Dust a work surface with flour and roll out puff pastry. Cut into squares. On each square, layer cheese, beef mixture, and more cheese. Pinch corners together to seal. Transfer to a baking sheet lined with parchment and brush with egg wash.
  5. Bake for 20 to 24 minutes until golden brown. Serve with special sauce and optional chopped lettuce and tomatoes.

Notes

Keep your puff pastry chilled until ready to use for a flakier texture. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for three months.
