These delightful Cheeseburger Puff Pastry Bites combine flaky pastry with seasoned beef and melty cheese, making them a perfect snack for any gathering.

- 1 pound lean ground beef (90% or leaner)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 1/2 cups shredded cheddar cheese
- 1 pinch all-purpose flour for surface dusting
- 2 puff pastry sheets
- 1 egg beaten with a splash of water
- 1 tablespoon olive oil
- 1 sweet onion finely chopped (about 1 1/4 cup)
- 1 teaspoon brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 squeeze fresh lemon
- 1/3 cup mayonnaise
- 2 tablespoons ketchup (or more to taste)
- 1 tablespoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1 1/2 tablespoons finely chopped dill pickle
- 1 1/2 tablespoons pickle brine (or apple cider vinegar)
Instructions
- Heat olive oil in a skillet over high heat. Add finely chopped onion, brown sugar, salt, pepper, and garlic powder. Reduce heat to medium/medium-low and cook for about 20 minutes, stirring often. Add water and lemon, deglaze the pan, and cook until liquid is gone.
- Mix mayonnaise, ketchup, Dijon mustard, garlic powder, onion powder, salt, dill pickle, and pickle brine in a bowl and refrigerate for the special sauce.
- Preheat oven to 400°F. In the same skillet, cook ground beef with salt, pepper, garlic, and onion powder until no longer pink. Drain excess fat, add caramelized onions and 2/3 of cheese, and stir to combine.
- Dust a work surface with flour and roll out puff pastry. Cut into squares. On each square, layer cheese, beef mixture, and more cheese. Pinch corners together to seal. Transfer to a baking sheet lined with parchment and brush with egg wash.
- Bake for 20 to 24 minutes until golden brown. Serve with special sauce and optional chopped lettuce and tomatoes.
Notes
Keep your puff pastry chilled until ready to use for a flakier texture. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for three months.
