Instructions
- In a small bowl, mix together tomato sauce and zucchini; let this sit for 3 minutes to prevent a dry topping.
- Spread the tomato sauce/zucchini mixture onto both slices of bread, using the back of a spoon for an even layer.
- Top with a handful of spinach, patting it dry first.
- Spread 1/4 cup of cottage cheese onto each slice, ensuring even coverage.
- Finish with cherry tomatoes, pressing them into the cottage cheese.
- Air fry at 390°F for about 8 minutes, checking at 6 minutes and rotating if necessary.
- When done, the bottom should be crispy and the cottage cheese slightly browned; if desired, broil for 30 seconds for extra color.
- Garnish with fresh basil and enjoy.
