  • 1/2 cup tomato sauce
  • 1/4 cup zucchini, shredded
  • 1/4 cup spinach, chopped
  • 1/2 cup cottage cheese
  • 1/4 cup cherry tomatoes, halved
  • Fresh basil for garnish

Instructions

  1. In a small bowl, mix together tomato sauce and zucchini; let this sit for 3 minutes to prevent a dry topping.
  2. Spread the tomato sauce/zucchini mixture onto both slices of bread, using the back of a spoon for an even layer.
  3. Top with a handful of spinach, patting it dry first.
  4. Spread 1/4 cup of cottage cheese onto each slice, ensuring even coverage.
  5. Finish with cherry tomatoes, pressing them into the cottage cheese.
  6. Air fry at 390°F for about 8 minutes, checking at 6 minutes and rotating if necessary.
  7. When done, the bottom should be crispy and the cottage cheese slightly browned; if desired, broil for 30 seconds for extra color.
  8. Garnish with fresh basil and enjoy.
