Description
A quick and delicious dinner idea featuring juicy chicken, colorful bell peppers, and sweet onions roasted to perfection, all served in warm tortillas.

- 1 Tbsp chili powder
- 1/2 Tbsp paprika
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cumin
- 1/8 tsp cayenne pepper
- 1 tsp sugar
- 1/2 tsp salt
- 2 small yellow onions (or one large)
- 3 bell peppers, any color
- 1 lb. chicken breast
- 2 Tbsp cooking oil
- 1 lime
- 8 6-inch tortillas
- 1/2 cup sour cream (optional)
- 1/4 bunch cilantro (optional)
Instructions
- Preheat your oven to 400ºF.
- In a small bowl, combine the chili powder, paprika, onion powder, garlic powder, cumin, cayenne, sugar, and salt.
- Slice the onion and bell peppers into 1/4-inch wide strips, and cut the chicken breast into thin strips.
- On a large baking sheet, combine the chicken and vegetables. Drizzle the cooking oil over them and sprinkle the fajita seasoning. Toss everything to coat.
- Spread the mixture evenly on the baking sheet and bake for 35-40 minutes, stirring halfway through.
- Remove from the oven and squeeze juice from half of the lime over the mixture.
- Serve in warm tortillas topped with cilantro and sour cream, if desired.
Notes
Feel free to customize with different vegetables or proteins. Leftovers store well in an airtight container for up to three days.
