Ingredients

  • 14 oz chicken or turkey sausage, cut into 1/2-in slices
  • 2 medium sweet potatoes, cut into 1/2-in cubes
  • 2 cups broccoli, cut into 1/2-in florets
  • 1 tablespoon unsalted butter
  • 4 medium cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat your oven to 400°F. Lightly grease a large sheet pan.
  2. Spread the sausage, sweet potatoes, and broccoli across the pan in an even layer.
  3. In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for about 1 minute until it’s fragrant.
  4. Pour in the honey, soy sauce, and apple cider vinegar. Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Let it simmer for 3 to 5 minutes until it has thickened slightly, stirring occasionally.
  5. Drizzle the honey garlic sauce over the sausage and veggies, then season with salt and pepper. Toss everything to coat well, arranging in a single layer on the sheet pan.
  6. Roast in the oven for 25 to 30 minutes, until the sweet potatoes are tender and the sausage is cooked through. Top with fresh parsley before serving warm.

Notes

For extra caramelization, roast the sweet potatoes for about 10 minutes before adding the sausage and broccoli. Feel free to substitute with other vegetables or adjust the sweetness of the sauce to your preference.
