Description

A comforting and hearty twist on the classic sloppy Joe sandwich, this soup is quick to prepare and perfect for cozy meals.


Ingredients

  • 1 lb ground beef
  • 1 Tbsp dried minced onion flakes
  • 1 (1.31-oz) packet sloppy joe seasoning mix
  • 1 (32-oz) box low-sodium beef broth
  • 1 (15.5-oz) can kidney beans (drained and rinsed)
  • 1 (15-oz) can corn kernels (drained)
  • 1 (15-oz) can Manwich sloppy joe sauce
  • 1 (14.5-oz) can petite diced tomatoes (undrained)
  • 1 tsp chili powder
  • 1 tsp hot sauce
  • Salt and pepper (to taste)

Instructions

  1. In a large Dutch oven, brown the ground beef over medium-high heat until it is no longer pink. Drain any excess grease.
  2. Add the remaining ingredients to the pot and stir well to combine.
  3. Bring the mixture to a boil. Once boiling, reduce the heat to medium and let it simmer for about 20 minutes.
  4. Serve hot in bowls, optionally topped with shredded cheese or fresh herbs.

Notes

For extra veggies, consider adding chopped bell peppers or carrots. Adjust spiciness with more or less hot sauce. Can use ground turkey or chicken for a lighter option.
