Ingredients

- 2 pounds chuck roast (cut into 2-inch pieces)
- 1–2 pounds baby red potatoes (cut into quarters)
- 4 tbsp butter (cut into slices)
- 1 pound baby carrots (halved)
- 1 onion (sliced)
- 1 packet onion soup mix
- 4 garlic cloves (minced)
- 1 tsp black pepper
Instructions
- Spray or line your 6-8 quart slow cooker.
- Add the potatoes, beef, carrots, onions, and seasonings, and mix together.
- Place the butter slices on top of the mixture.
- Cover and cook on low for 6 hours or high for 3 hours.
Notes
For thicker sauce, remove the lid and cook on high for 20–30 minutes, or stir in a cornstarch slurry and cook for an additional 10 minutes. Layer ingredients properly for even cooking.
