Description

A hearty and easy-to-make Slow Cooker Chicken Lo Mein with tender chicken, vibrant veggies, and flavorful noodles cooked in a savory sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 8 oz lo mein noodles
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add mixed vegetables, garlic, and ginger on top of the chicken.
  3. Mix together soy sauce, oyster sauce, and sesame oil, and pour over the chicken and vegetables.
  4. Cook on low for 4-6 hours until the chicken is cooked through.
  5. In the last 30 minutes, add the lo mein noodles.
  6. Once the noodles are cooked, mix everything well and season with salt and pepper.
  7. Serve topped with green onions.

For best flavor, enjoy this dish within a few days of cooking. Store leftovers in an airtight container.
