Description

A comforting slow-cooked soup that combines tender chicken, pasta, and spinach in a creamy broth.


Ingredients

  • 3 chicken breasts (sliced in half for quicker cooking)
  • 7 cups chicken broth (preferably low-sodium)
  • 4 medium carrots (diced)
  • 1 onion (diced)
  • 4 cloves garlic (chopped)
  • 2 tsp Italiano seasoning
  • 1 tsp garlic powder
  • ½ tsp parsley (fresh or dried)
  • ¾ tsp seasoning salt
  • â…› tsp black pepper
  • 500 grams large shell pasta
  • 1 cup spinach (fresh or frozen)
  • ½ cup parmesan cheese
  • 1½ cups light cream (10% or 18%)
  • 2 tbsp cornstarch

Instructions

  1. Cut chicken breasts in half and place them in the slow cooker.
  2. Add diced onion, diced carrot, chopped garlic, chicken broth, Italiano seasoning, garlic powder, parsley, seasoning salt, and black pepper. Stir to mix.
  3. Cover and set slow cooker on high for 3-4 hours or low for 6-8 hours.
  4. Remove chicken and shred using forks, or shred it in the slow cooker.
  5. Add uncooked pasta shells and spinach. Mix cream and cornstarch, pour into the slow cooker and mix well.
  6. Cover and cook on high for another 20-30 minutes until pasta is al dente.
  7. Stir in parmesan cheese just before serving.

Notes

Serve with extra parmesan and fresh parsley. Can be paired with crusty bread or a light salad.
