Description
A comforting slow-cooked soup that combines tender chicken, pasta, and spinach in a creamy broth.

- 3 chicken breasts (sliced in half for quicker cooking)
- 7 cups chicken broth (preferably low-sodium)
- 4 medium carrots (diced)
- 1 onion (diced)
- 4 cloves garlic (chopped)
- 2 tsp Italiano seasoning
- 1 tsp garlic powder
- ½ tsp parsley (fresh or dried)
- ¾ tsp seasoning salt
- â…› tsp black pepper
- 500 grams large shell pasta
- 1 cup spinach (fresh or frozen)
- ½ cup parmesan cheese
- 1½ cups light cream (10% or 18%)
- 2 tbsp cornstarch
Instructions
- Cut chicken breasts in half and place them in the slow cooker.
- Add diced onion, diced carrot, chopped garlic, chicken broth, Italiano seasoning, garlic powder, parsley, seasoning salt, and black pepper. Stir to mix.
- Cover and set slow cooker on high for 3-4 hours or low for 6-8 hours.
- Remove chicken and shred using forks, or shred it in the slow cooker.
- Add uncooked pasta shells and spinach. Mix cream and cornstarch, pour into the slow cooker and mix well.
- Cover and cook on high for another 20-30 minutes until pasta is al dente.
- Stir in parmesan cheese just before serving.
Notes
Serve with extra parmesan and fresh parsley. Can be paired with crusty bread or a light salad.
