Description

A cozy, nutrient-dense soup featuring chicken, sweet potatoes, and kale, perfect for weeknight dinners.


Ingredients

Scale
  • 2 pounds sweet potatoes, peeled and chopped into 1-inch pieces
  • 1 bunch Lacinato kale, stems removed and thinly sliced
  • 1 pound boneless skinless chicken breasts or thighs
  • 64 oz chicken stock
  • 23 teaspoons kosher salt
  • 2 teaspoons Italian seasoning
  • 2 garlic cloves, minced
  • Extra virgin olive oil (to serve)

Instructions

  1. Place all ingredients in a 6-qt slow cooker and stir to combine, layering sweet potatoes on the bottom.
  2. Cover and cook on high for 3-5 hours or low for 6-7 hours, until sweet potatoes are tender and chicken is cooked through.
  3. Remove chicken and shred it with two forks. Return to slow cooker and stir to combine. Adjust salt to taste.
  4. Serve hot with a drizzle of olive oil.

Notes

For firmer vegetables, add kale in the last 20-30 minutes. Adjust salt to taste at the end to avoid over-seasoning.
