Description

Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1.5 cups low-sodium chicken broth
  • 1 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • 1 cup frozen peas
  • 1/4 cup fresh parsley, chopped, for garnish

Instructions

  1. 1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until lightly browned on all sides. Transfer to slow cooker.
  2. 2. Add chopped onion, carrots, and celery to the same skillet. Cook for 5-7 minutes until softened.
  3. 3. Add minced garlic and cook for another minute until fragrant.
  4. 4. Add sautéed vegetables and garlic to the slow cooker.
  5. 5. Stir in dried thyme, dried rosemary, black pepper, and salt.
  6. 6. Pour in chicken broth and white wine.
  7. 7. If thickening, whisk flour with a few tablespoons of liquid from the slow cooker until smooth, then stir back into the slow cooker.
  8. 8. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  9. 9. Stir in frozen peas about 15-20 minutes before serving.
  10. 10. Taste and adjust seasoning.
  11. 11. Serve hot, garnished with fresh parsley.

Notes

Let stew cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave.
