A cozy and delicious Smash Burger Quesadilla with melted cheese, savory beef, and fresh veggies wrapped in a crispy tortilla.

- ½ pound ground beef
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ⅛ teaspoon salt
- 1 10-inch flour tortilla
- 1 cup shredded Mexican-blend cheese
- 1 tablespoon red onion (diced)
- 1 tablespoon jalapeno (diced)
- 1 tablespoon roma tomato (diced)
- 1 to 2 tablespoons chipotle mayo
Instructions
- Combine the ground beef, garlic powder, onion powder, and salt in a bowl and mix well.
- Roll the seasoned beef into a log about 6 inches long.
- Preheat a cast iron pan over medium-high heat. Once hot, add the beef log and smash it into a flat patty with a spatula. Cook for 3 minutes, then flip and cook for another 3 minutes until desired doneness.
- In another cast iron pan, heat over medium-low and place a tortilla down. Sprinkle shredded cheese over the tortilla and add diced red onion, jalapeno, and tomatoes to one half.
- Cook this open-faced for about 5 minutes until the cheese is gooey and the bottom is golden brown.
- Transfer the cooked burger patty to the cheese half of the tortilla and top with chipotle mayo.
- Fold the tortilla over the patty to seal.
- Slice in half and serve warm!
Notes
Serve with salsa or guacamole for dipping. For variations, try different cheeses or add greens like spinach.
