Cooking Up Smoked Sausage and Rice

Ingredients:

  • 3 tbsp extra virgin olive oil
  • 5 garlic cloves, finely minced
  • 1 medium onion, chopped (or 1 large)
  • 1 yellow capsicum, cut into 1.5cm / 1″ squares
  • 1 red capsicum, cut into 1.5cm / 1″ squares
  • 400 g/14oz (~3) kransky or other smoked sausages, sliced 0.5cm thick / 1/4″ thick
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 3/4 tsp smoked paprika (sub normal paprika)
  • 1 1/2 cups long grain white rice, uncooked
  • 2 1/2 cups low sodium chicken stock/broth (or vegetable stock)
  • 2 cups frozen peas, thawed
  • 2 tbsp parsley, chopped (optional)

Directions:

  1. Cook the Sausage: Start by heating 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium-high heat. Add the sausage slices and cook until they’re beautifully golden. Use a slotted spoon to remove them from the pot and set them aside.
  2. Cook the Onion and Garlic: Add the remaining tablespoon of oil to the pot. Toss in minced garlic and chopped onion, cooking for about 2 minutes until the onion turns translucent. Then, add the capsicum and continue cooking for another 2 minutes.
  3. Add Rice and Liquid: Stir in the rice, chicken stock, smoked paprika, salt, pepper, and the cooked sausage. Give it all a good stir, bring it to a boil, and then reduce the heat to let it simmer gently.
  4. Cover and Cook: Put a lid on the pot and let it cook for 20 minutes. Trust me, the aroma will make you hungry!
  5. Add Peas and Rest: Once the 20 minutes are up, take the pot off the stove. Work quickly to remove the lid and add the thawed peas before putting the lid back on. Let it rest for 10 minutes. The residual heat will cook the peas perfectly.
  6. Fluff and Serve: Finally, add the chopped parsley. Grab a fork and fluff up the rice. Serve your warm, mouthwatering dish immediately!

Serving Suggestions for Smoked Sausage and Rice

This smoked sausage and rice dish can stand alone as a hearty meal; however, it pairs wonderfully with a simple green salad or some crusty bread for mopping up those delicious juices. A glass of chilled lemonade or iced tea completes the meal beautifully!

Storing and Reheating Leftovers

If you’re lucky enough to have leftovers, store them in an airtight container in the fridge for up to three days. When you’re ready to enjoy your meal again, reheat it gently on the stovetop or in the microwave, adding a splash of water to keep it moist.

Tips for Perfecting Your One-Pot Dish

  • Use Quality Sausage: For the best flavor, choose a high-quality smoked sausage. It elevates the taste of the whole dish!
  • Customize it: Feel free to add any veggies you have on hand. Broccoli, carrots, or corn work wonderfully with this recipe.
  • Enhance the Flavor: A squeeze of fresh lemon juice just before serving brightens up the dish.

Variations You Can Try

Feeling adventurous? Swap out smoked sausage for chicken, shrimp, or even a vegetarian sausage for a twist on this classic. Also, different types of rice can add unique flavors – try brown rice or wild rice for a hearty variation.

FAQs

Can I use brown rice instead of white rice?

Yes, but keep in mind that cooking times will change! Brown rice usually takes longer to cook, so adjust the liquid and time accordingly.

Can I make this dish ahead of time?

Absolutely! You can prepare it a day in advance. Just reheat before serving, and it’ll still be delicious.

What if I don’t have chicken stock?

No worries! Vegetable stock works just as well. It’ll give the dish a lovely flavor, too.

Cooking up this smoked sausage and rice is more than just making a meal; it’s about creating memories with your loved ones around the dinner table. So gather your family, and enjoy every cozy bite!
