Smoked Sausage and Rice Bowls

Description

A comforting one-pot meal featuring smoked sausage, colorful veggies, and rice, perfect for busy evenings.


Ingredients

Scale
  • 3 tbsp extra virgin olive oil
  • 5 garlic cloves, finely minced
  • 1 medium onion, chopped
  • 1 yellow capsicum, cut into 1.5cm squares
  • 1 red capsicum, cut into 1.5cm squares
  • 400 g kransky or other smoked sausages, sliced 0.5cm thick
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 3/4 tsp smoked paprika
  • 1 1/2 cups long grain white rice, uncooked
  • 2 1/2 cups low sodium chicken stock
  • 2 cups frozen peas, thawed
  • 2 tbsp parsley, chopped (optional)

Instructions

  1. Heat 2 tbsp of olive oil in a large pot over medium-high heat. Add sausage slices and cook until golden, then set aside.
  2. Add the remaining 1 tbsp of oil to the pot. Cook minced garlic and chopped onion for about 2 minutes until translucent, then add capsicum and cook for another 2 minutes.
  3. Stir in rice, chicken stock, smoked paprika, salt, pepper, and the cooked sausage. Bring to a boil, then reduce heat to simmer.
  4. Cover and cook for 20 minutes.
  5. Remove from heat, add thawed peas quickly and cover for 10 minutes.
  6. Add chopped parsley, fluff the rice with a fork, and serve immediately.

Notes

Pairs well with a green salad or crusty bread. For storage, keep leftovers in an airtight container in the fridge for up to three days.
