Description
A comforting one-pot meal featuring smoked sausage, colorful veggies, and rice, perfect for busy evenings.
Ingredients

- 3 tbsp extra virgin olive oil
- 5 garlic cloves, finely minced
- 1 medium onion, chopped
- 1 yellow capsicum, cut into 1.5cm squares
- 1 red capsicum, cut into 1.5cm squares
- 400 g kransky or other smoked sausages, sliced 0.5cm thick
- 3/4 tsp salt
- 1/2 tsp pepper
- 3/4 tsp smoked paprika
- 1 1/2 cups long grain white rice, uncooked
- 2 1/2 cups low sodium chicken stock
- 2 cups frozen peas, thawed
- 2 tbsp parsley, chopped (optional)
Instructions
- Heat 2 tbsp of olive oil in a large pot over medium-high heat. Add sausage slices and cook until golden, then set aside.
- Add the remaining 1 tbsp of oil to the pot. Cook minced garlic and chopped onion for about 2 minutes until translucent, then add capsicum and cook for another 2 minutes.
- Stir in rice, chicken stock, smoked paprika, salt, pepper, and the cooked sausage. Bring to a boil, then reduce heat to simmer.
- Cover and cook for 20 minutes.
- Remove from heat, add thawed peas quickly and cover for 10 minutes.
- Add chopped parsley, fluff the rice with a fork, and serve immediately.
Notes
Pairs well with a green salad or crusty bread. For storage, keep leftovers in an airtight container in the fridge for up to three days.
