Ingredients

- 2 cans chickpeas, drained and rinsed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 can coconut milk, full-fat
- 2 cups vegetable or chicken stock
- 4 cups dark leafy greens (kale or spinach)
- Handful of fresh mint
- 1 tbsp turmeric
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add minced garlic and sauté until fragrant.
- Add drained chickpeas and cook until crispy.
- Pour in coconut milk and stock, stir in turmeric, salt, and pepper.
- Add dark leafy greens and let simmer until wilted.
- Garnish with fresh mint before serving.
Notes
For depth of flavor, toast spices in oil before adding garlic. You can also blend half the stew for a creamy texture while keeping whole chickpeas.
