Description

A warm and nourishing stew featuring chickpeas, coconut milk, and a vibrant array of spices, perfect for busy weeknights.


Ingredients

Scale
  • 2 cans chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 can coconut milk, full-fat
  • 2 cups vegetable or chicken stock
  • 4 cups dark leafy greens (kale or spinach)
  • Handful of fresh mint
  • 1 tbsp turmeric
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add drained chickpeas and cook until crispy.
  4. Pour in coconut milk and stock, stir in turmeric, salt, and pepper.
  5. Add dark leafy greens and let simmer until wilted.
  6. Garnish with fresh mint before serving.

Notes

For depth of flavor, toast spices in oil before adding garlic. You can also blend half the stew for a creamy texture while keeping whole chickpeas.
