Description

A comforting and slightly spicy chicken soup made with tender shredded chicken, mashed vegetables, and ditali pasta, inspired by Carrabba’s recipe.


Ingredients

  • 1 1/2 celery ribs – diced
  • 1 carrot – peeled & diced
  • 1/2 yellow onion – diced
  • 1 small russet potato – peeled & diced
  • 1/2 red pepper – diced
  • 1 (14 oz) can of tomatoes – drained & chopped
  • 3 tbsp olive oil
  • 1 tbsp parsley
  • 1 tbsp oregano
  • 2 tbsp minced garlic
  • 1/2 tsp red pepper flakes
  • 5 cups water
  • 2 cups chicken broth
  • 2 cups shredded chicken (preferably rotisserie)
  • 2 cups cooked ditali pasta

Instructions

  1. Prepare the ingredients by dicing the celery, carrot, onion, russet potato, and red pepper. Drain and chop the canned tomatoes, and shred the chicken if needed.
  2. Heat 3 tbsp olive oil in a large pot over medium heat. Add the diced onion, celery, carrot, red pepper, and potato. Sauté until the vegetables soften and the onion is translucent, about 6 to 8 minutes.
  3. Stir in 2 tbsp minced garlic, 1 tbsp parsley, 1 tbsp oregano, and 1/2 tsp red pepper flakes. Then add the drained and chopped 14 oz can of tomatoes, cooking for 1 to 2 minutes.
  4. Add 5 cups water and 2 cups chicken broth. Bring to a simmer, reduce heat, and let simmer gently for about 15 to 20 minutes until the potato and carrot are fully tender.
  5. Use a potato masher to mash some of the cooked vegetables, thickening the broth while leaving some pieces whole for texture.
  6. Stir in 2 cups shredded chicken and 2 cups cooked ditali pasta, heating through for 3 to 5 minutes until warmed.
  7. Taste and adjust seasoning as needed, then ladle into bowls and garnish with extra parsley, if desired. Serve hot.

Notes

For gluten-free, swap ditali pasta with gluten-free pasta. For vegetarian, replace chicken broth with vegetable broth and omit chicken.
