Description

A quick and flavorful Spicy Ramen recipe perfect for cozy evenings. Easy to prepare and packed with wholesome ingredients.


Ingredients

  • 2 packets ramen noodles (seasonings discarded)
  • 4 cups vegetable broth
  • 1 teaspoon sesame oil
  • 1 small red onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar

Instructions

  1. Heat sesame oil in a non-stick skillet over medium heat. Add sliced red onion and halved cherry tomatoes; sauté for about 1 minute.
  2. Add chili sauce, and cook for another 2 to 3 minutes until onions are translucent.
  3. Transfer the mixture to a blender along with vegetable broth, soy sauce, rice vinegar, and brown sugar. Blend until smooth.
  4. Pour the mixture into a saucepan and bring it to a boil.
  5. Once simmering, drop in ramen noodles and cook until al dente, about 3 to 4 minutes.
  6. Serve topped with sesame seeds, chopped green onions, and a soft boiled egg if desired.

Notes

Adjust the spice level by varying the amount of chili sauce. Use fresh ingredients for enhanced flavor.
