- 2 packets ramen noodles (seasonings discarded)
- 4 cups vegetable broth
- 1 teaspoon sesame oil
- 1 small red onion (thinly sliced)
- 1 cup cherry tomatoes (halved)
- 2 tablespoons chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
Instructions
- Heat sesame oil in a non-stick skillet over medium heat. Add sliced red onion and halved cherry tomatoes; sauté for about 1 minute.
- Add chili sauce, and cook for another 2 to 3 minutes until onions are translucent.
- Transfer the mixture to a blender along with vegetable broth, soy sauce, rice vinegar, and brown sugar. Blend until smooth.
- Pour the mixture into a saucepan and bring it to a boil.
- Once simmering, drop in ramen noodles and cook until al dente, about 3 to 4 minutes.
- Serve topped with sesame seeds, chopped green onions, and a soft boiled egg if desired.
Notes
Adjust the spice level by varying the amount of chili sauce. Use fresh ingredients for enhanced flavor.
