Delicious homemade egg bites that mimic the Starbucks favorites, packed with flavor and nutrition, perfect for an easy breakfast.

- Cooking spray
- 4 slices bacon or turkey bacon (diced)
- 8 eggs, whisked
- 1 cup cottage cheese
- 1 cup gruyere cheese (shredded)
- 1 tbsp cornstarch
- 1/4 tsp salt
Instructions
- Preheat your oven to 300°F and boil water in a kettle.
- Heat a skillet over medium-high heat, spray with cooking spray, and cook the bacon for 4-5 minutes until crispy.
- Drain bacon on a paper towel-lined plate and set aside.
- In a blender, combine cottage cheese, gruyere cheese, cornstarch, and salt, blend until creamy.
- Add the whisked eggs to the blender, blend until just combined.
- Grease a 12-count metal muffin tray with cooking spray, place it atop a 9×13 baking sheet.
- Distribute the crispy bacon among the muffin tin cups.
- Pour the egg filling over bacon until cups are almost full.
- Pour boiling water into the baking sheet to submerge the muffin cups’ bottom.
- Bake for 30 minutes until just set, then remove muffin tin and baking sheet.
- Allow egg bites to cool slightly before gently removing them from the muffin tin cups. Serve warm and enjoy!
Notes
These egg bites can be refrigerated for up to a week or frozen for up to two months. Reheat in the microwave for 30-60 seconds.
