Description

A hearty one-pan dinner featuring seasoned ground beef, instant rice, and Mexican-inspired flavors that’s ready in under 30 minutes.


Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (4 oz) diced green chiles
  • 2 cups beef broth
  • 1½ cups instant white rice
  • 1 cup frozen corn kernels
  • 1 cup shredded Mexican cheese blend
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 2 tablespoons vegetable oil

Instructions

  1. 1. Heat oil in large skillet over medium-high heat.
  2. 2. Cook onion and bell pepper for 4-5 minutes until softened.
  3. 3. Add garlic and cook 30 seconds until fragrant.
  4. 4. Add ground beef, cook 6-8 minutes until browned completely.
  5. 5. Add all spices, cook 1 minute to bloom flavors.
  6. 6. Add tomatoes and green chiles, cook 2-3 minutes.
  7. 7. Pour in beef broth and bring to boil.
  8. 8. Add rice and corn, stir well to combine.
  9. 9. Reduce heat to low, cover and simmer 5 minutes.
  10. 10. Remove from heat, let stand covered 5 minutes.
  11. 11. Fluff with fork, top with cheese.
  12. 12. Cover 2-3 minutes to melt cheese.
  13. 13. Garnish with cilantro and serve with lime wedges.

Notes

Store leftovers up to 4 days refrigerated. Add splash of broth when reheating to restore moisture.
