A hearty one-pan dinner featuring seasoned ground beef, instant rice, and Mexican-inspired flavors that’s ready in under 30 minutes.

- 1 pound ground beef (80/20 blend)
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon oregano
- ¼ teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (4 oz) diced green chiles
- 2 cups beef broth
- 1½ cups instant white rice
- 1 cup frozen corn kernels
- 1 cup shredded Mexican cheese blend
- 2 tablespoons fresh cilantro, chopped
- 1 lime, cut into wedges
- 2 tablespoons vegetable oil
Instructions
- 1. Heat oil in large skillet over medium-high heat.
- 2. Cook onion and bell pepper for 4-5 minutes until softened.
- 3. Add garlic and cook 30 seconds until fragrant.
- 4. Add ground beef, cook 6-8 minutes until browned completely.
- 5. Add all spices, cook 1 minute to bloom flavors.
- 6. Add tomatoes and green chiles, cook 2-3 minutes.
- 7. Pour in beef broth and bring to boil.
- 8. Add rice and corn, stir well to combine.
- 9. Reduce heat to low, cover and simmer 5 minutes.
- 10. Remove from heat, let stand covered 5 minutes.
- 11. Fluff with fork, top with cheese.
- 12. Cover 2-3 minutes to melt cheese.
- 13. Garnish with cilantro and serve with lime wedges.
Notes
Store leftovers up to 4 days refrigerated. Add splash of broth when reheating to restore moisture.
