Whimsical Ghost Meringues are a delightful treat perfect for Halloween gatherings.
Ingredients

- 3 large egg whites (room temperature)
- 1/4 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1/4 teaspoon vanilla bean paste
- 1/2 ounce dark chocolate (melted)
Instructions
- Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper or a silicone liner.
- In a stand mixer fitted with a whisk attachment, combine the egg whites and cream of tartar, whisking on medium speed until frothy.
- Gradually add granulated sugar one tablespoon at a time while increasing the mixer speed to medium-high, whisking until soft peaks form (about 5 to 6 minutes).
- Add vanilla bean paste and continue beating until the meringue holds stiff peaks.
- Transfer the meringue to a piping bag fitted with a large round tip and pipe 2-inch high mounds, spacing them an inch apart.
- Bake at 200°F for 1 hour, then turn off the oven and leave the meringues to dry in the oven for another 1 to 2 hours.
- Once cooled, use melted dark chocolate to paint spooky faces on the meringue ghosts.
Notes
Store meringues in an airtight container at room temperature for freshness. They last about a week.
