Description

A refreshing and flavorful pasta salad inspired by classic grinder sandwiches, featuring tortellini, deli meats, crisp vegetables, and a zesty dressing. Perfect for picnics, potlucks, and easy weeknight meals.


Ingredients

  • 1 package (16-20 ounces) refrigerated cheese tortellini
  • 1/2 pound thinly sliced deli ham
  • 1/2 pound thinly sliced deli salami
  • 1/2 pound thinly sliced deli pepperoni
  • 1 cup chopped iceberg lettuce
  • 1 cup chopped fresh tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green bell pepper
  • 1/4 cup sliced Kalamata olives (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 1/4 cup grated Parmesan cheese (for serving)

Instructions

  1. 1. Cook tortellini according to package directions; drain and rinse with cold water.
  2. 2. In a bowl, whisk together mayonnaise, red wine vinegar, olive oil, oregano, garlic powder, salt, and pepper for the dressing.
  3. 3. In a large bowl, combine tortellini, lettuce, tomatoes, red onion, green bell pepper, and olives (if using).
  4. 4. Dice ham, salami, and pepperoni into bite-sized pieces and add to the large bowl.
  5. 5. Pour dressing over the ingredients and toss to coat well.
  6. 6. Refrigerate for at least 30 minutes to allow flavors to meld.
  7. 7. Toss gently before serving, garnished with Parmesan cheese.

Notes

Store in an airtight container in the refrigerator for up to 4 days. Serve cold.
