A refreshing and flavorful pasta salad inspired by classic grinder sandwiches, featuring tortellini, deli meats, crisp vegetables, and a zesty dressing. Perfect for picnics, potlucks, and easy weeknight meals.

- 1 package (16-20 ounces) refrigerated cheese tortellini
- 1/2 pound thinly sliced deli ham
- 1/2 pound thinly sliced deli salami
- 1/2 pound thinly sliced deli pepperoni
- 1 cup chopped iceberg lettuce
- 1 cup chopped fresh tomatoes
- 1/2 cup chopped red onion
- 1/2 cup chopped green bell pepper
- 1/4 cup sliced Kalamata olives (optional)
- 1/2 cup mayonnaise
- 1/4 cup red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 1/4 cup grated Parmesan cheese (for serving)
Instructions
- 1. Cook tortellini according to package directions; drain and rinse with cold water.
- 2. In a bowl, whisk together mayonnaise, red wine vinegar, olive oil, oregano, garlic powder, salt, and pepper for the dressing.
- 3. In a large bowl, combine tortellini, lettuce, tomatoes, red onion, green bell pepper, and olives (if using).
- 4. Dice ham, salami, and pepperoni into bite-sized pieces and add to the large bowl.
- 5. Pour dressing over the ingredients and toss to coat well.
- 6. Refrigerate for at least 30 minutes to allow flavors to meld.
- 7. Toss gently before serving, garnished with Parmesan cheese.
Notes
Store in an airtight container in the refrigerator for up to 4 days. Serve cold.
