Description

Delicious Thai Peanut Chicken Wraps filled with a zesty peanut sauce and crunchy coleslaw, perfect for a family-friendly meal.


Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar
  • 1/2 tablespoon minced garlic
  • 1/2 tablespoon minced ginger
  • 1 teaspoon sriracha sauce
  • 12 tablespoons water (optional)
  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas

Instructions

  1. In a small mixing bowl, whisk together the peanut butter, soy sauce, brown sugar, rice wine vinegar, minced garlic, ginger, and sriracha. Add water as needed for desired consistency.
  2. Toss together the chopped chicken, coleslaw mix, grated carrot (if using), cilantro, and roasted peanuts in a large bowl. Drizzle the peanut dressing over the mixture and toss to coat.
  3. Microwave the tortillas for about 30 seconds to soften them.
  4. Divide the chicken filling among the warm tortillas, wrap them tightly, and serve immediately.

Notes

For a creamier peanut sauce, microwave the peanut butter before mixing. Adjust the spice level to taste. Experiment with different veggies in your slaw mix.
