- 1 can of white beans (cannellini or navy beans), drained and rinsed
- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 cups fresh spinach
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat until it shimmers.
- Add the onion, carrots, and celery; cook for 5-7 minutes until softened.
- Stir in the garlic and cook for another minute until fragrant.
- Cook the Italian sausage until browned, breaking it up as it cooks.
- Pour in the broth and bring to a boil, then reduce to a steady simmer.
- Stir in the white beans, oregano, thyme, and season with salt and pepper.
- Reduce heat and simmer for 20 minutes to concentrate the flavors.
- Stir in the spinach and cook until wilted.
- Serve hot and enjoy!
