Description

Ingredients

  • 1 teaspoon lemon zest
  • 2 slices whole grain bread
  • 1 large avocado

  • 1/4 cup kale microgreens
  • 1 teaspoon everything bagel spice

Instructions

  1. Mix the lemon zest and ricotta in a small bowl until smooth and fully combined.
  2. Toast the bread to your preferred level of crispiness.
  3. Scoop the avocado out of its skin, mash it in a bowl with a fork, and add a pinch of salt.
  4. In a skillet, cook the eggs for 2–4 minutes until they reach your desired doneness.
