Instructions
- Whisk together the flour, granulated sugar, baking powder, and salt in a large bowl.
- In another bowl, combine the egg, milk, melted butter, and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients, stirring until just combined.
- Heat oil in a deep fryer or a heavy pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, frying until golden brown—about 2-3 minutes on each side.
- Remove them and let them drain on paper towels.
- Dust warm beignets with powdered sugar and serve immediately.
Notes
For extra flavor, add a pinch of nutmeg to the dry ingredients. Ensure oil is hot enough before frying to avoid greasy beignets. Cool on paper towels to keep them airy.
