Description

A hearty and flavorful vegan soup featuring red lentils, black beans, and traditional Mexican spices. This protein-rich soup is naturally thick and satisfying.


Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1½ cups)
  • 1 red bell pepper, diced (about 1 cup)
  • 3 garlic cloves, minced
  • 1 jalapeño pepper, seeded and finely diced
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (optional)
  • 1 cup red lentils, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 cups water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 tablespoons tomato paste
  • 1 tablespoon lime juice (about ½ lime)
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. 1. Heat olive oil in a large soup pot over medium heat. Add onion and bell pepper, cook 5-6 minutes until softened.
  2. 2. Add garlic and jalapeño, cook 1 minute stirring constantly.
  3. 3. Stir in cumin, chili powder, paprika, oregano, and cayenne. Cook 30-45 seconds until fragrant.
  4. 4. Add lentils, stirring to coat with spice mixture. Cook 2 minutes.
  5. 5. Add diced tomatoes, vegetable broth, water, and tomato paste. Stir to combine.
  6. 6. Bring to a boil, then reduce heat and simmer partially covered 20-25 minutes until lentils are tender.
  7. 7. Add black beans and corn, simmer another 10-12 minutes.
  8. 8. Remove from heat and stir in lime juice, salt, and pepper. Adjust seasonings to taste.
  9. 9. Serve hot garnished with fresh cilantro and desired toppings.

Notes

Store leftovers in refrigerator up to 5 days or freeze up to 3 months. Soup may thicken when stored – add broth when reheating to desired consistency.
