Description

A quick and simple appetizer featuring velvety smooth ricotta, drizzled with honey and topped with crunchy walnuts.


Ingredients

Scale
  • 2 cups fresh ricotta (about 475g)
  • Zest from half a lemon
  • Juice from half a lemon
  • 1/4 tsp salt
  • Pinch of ground pepper
  • 1 tbsp olive oil
  • 1/4 cup liquid honey
  • 1 tsp hot sauce
  • 1/2 tsp chili flakes
  • 1 to 2 tsp fresh minced rosemary
  • 1/4 cup chopped walnuts

Instructions

  1. In a food processor or high-speed blender, add ricotta, lemon juice, lemon zest, salt, pepper, and olive oil. Blend on high speed until smooth and creamy, about 1 to 2 minutes.
  2. Spread the whipped ricotta in a shallow bowl and create a well in the center with the back of a spoon.
  3. In a separate bowl, mix together liquid honey, hot sauce, and chili flakes until combined.
  4. Drizzle the honey mixture over the ricotta and top with chopped walnuts and minced rosemary.
  5. Serve with crackers or crostini and enjoy!

Notes

Store any unused whipped ricotta in an airtight container in the fridge for up to 3 days. Regain creaminess by stirring before serving.
