Description
A vibrant and healthy dish featuring spiralized zucchini noodles tossed with succulent shrimp in a lemony garlic sauce. Ready in just 20 minutes!

- 4 medium zucchini (about 1.5 lb)
- 30 raw shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 garlic cloves, finely chopped
- 2 tbsp butter or ghee
- 1 lemon (juice and zest)
- 1/4 cup white wine (or chicken broth)
- 1/4 cup chopped parsley
- Pinch of red pepper flakes
- Salt and pepper (to taste)
Instructions
- Wash the zucchini and cut off the ends. Using a spiralizer, make your zucchini pasta and set it aside.
- In a large pan over medium-high heat, heat the olive oil. Add the shrimp in a flat layer, seasoning with salt and pepper. Cook for about one minute without stirring.
- Once the shrimp start to turn pink, add the chopped garlic and stir for another minute until cooked through. Remove the shrimp and set aside on a plate.
- In the same pan, add the butter, lemon juice and zest, red pepper flakes, and white wine. Stir and bring to a gentle simmer for about 2-3 minutes.
- Stir in the chopped parsley, then add the zucchini noodles, warming them for about 30 seconds. Add the shrimp back into the pan and stir for another minute. Serve immediately!
Notes
Serve with fresh parsley and grated Parmesan cheese. Perfect with a simple green salad or crusty bread.
