Instructions
- Drain and rinse the canned chickpeas, then mash them in a bowl until chunky.
- Add in the chopped almonds, which will provide a nice crunch.
- Mix in the diced fruit to add a hint of sweetness, then add the vegan mayo, salt, and pepper, stirring until well combined.
- Serve the salad on a bed of lettuce leaves for a refreshing crunch.
Notes
Using ripe fruit enhances sweetness; drain chickpeas well to avoid a runny salad. For a nut-free version, substitute sunflower seeds.
