Description

A tender skillet dinner featuring seasoned chicken breasts cooked with cherry tomatoes, Kalamata olives, and feta cheese for a burst of Mediterranean flavor.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Season both sides of 4 chicken breasts evenly with 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Add the chicken to the hot skillet. Cook for 4 to 5 minutes on the first side without moving it until a golden-brown crust forms. Flip and cook for 3 to 4 minutes on the second side.
  3. Scatter 1 cup halved cherry tomatoes and 1/2 cup sliced Kalamata olives into the open spaces around the chicken in the skillet.
  4. Sprinkle 1/2 cup crumbled feta cheese directly over the top of the chicken breasts. Cover the skillet with a lid and cook for 2 to 3 minutes—just until the tomatoes soften and burst into a pan sauce, the feta warms, and the chicken reaches an internal temperature of 165°F (74°C).
  5. Remove from heat, sprinkle with freshly chopped parsley, and serve immediately with the warm pan juices spooned over the top.

Notes

Store leftovers in an airtight container for up to 3 days and reheat gently on the stovetop with a splash of water or broth. For an extra zing, consider adding capers along with the olives.
