- 4 salmon filets (6–8 ounces each)
- 1/2 cup bourbon
- 2 ripe peaches, sliced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a bowl, mix bourbon, soy sauce, brown sugar, minced garlic, salt, and pepper to create the marinade. Let it sit for a few minutes.
- Place the salmon filets in the marinade and let them sit for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a skillet over medium-high heat.
- Sear the salmon filets for 2-3 minutes on each side until golden brown.
- Transfer the salmon to a baking dish, add sliced peaches, and pour the marinade over the top.
- Bake for 15-20 minutes or until the salmon is cooked through and the marinade has caramelized.
- Serve warm, drizzling with the glaze and garnished with extra peach slices if desired.
Notes
For best results, marinate the salmon for up to 2 hours and use a meat thermometer to ensure the salmon is cooked to 145°F (63°C).
