Description

A creamy vegan pasta dish made with silken tofu, fresh spinach, and garlic, perfect for a quick and nutritious meal.


Ingredients

  • 1 block silken tofu
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Pasta of your choice

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add fresh spinach to the skillet and cook until wilted, approximately 2–3 minutes.
  4. Combine the silken tofu, sautéed spinach, lemon juice, salt, and pepper in a blender; blend until smooth.
  5. Mix the cooked pasta with the spinach and garlic in the skillet and combine with the tofu sauce, ensuring everything is well coated.
  6. Serve immediately and enjoy!

Notes

Drain the tofu well to avoid excess moisture which can thin the sauce. For a creamier texture, blend the sauce until completely smooth.
