Description

A quick and satisfying Mediterranean chicken dish featuring sweet roasted red peppers and a warm garlic sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, roasted and chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Season the chicken breasts with oregano, paprika, salt, and pepper, covering them evenly.
  3. Add the chicken to the skillet and cook until golden brown on both sides and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the pan and set it aside on a plate.
  5. Add the minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  6. Add the roasted red bell pepper and cook for another 2 minutes.
  7. Return the chicken to the skillet, coating it with the red pepper sauce.
  8. Garnish with fresh parsley and serve hot.

Notes

Serve with quinoa or a simple green salad for a complete meal. Store leftovers in the fridge for up to 3 days.
