Ingredients

- 1 tablespoon ghee (or butter)
- 1 clove garlic, chopped
- 1/4 teaspoon turmeric powder
- Pinch of red chili (or cayenne pepper)
- 1 carrot, chopped
- 2–3 stalks celery, chopped
- 1/2 teaspoon salt (to taste)
- 4 cups vegetable broth (or water)
- 3 cups broccoli, chopped
- 4 cups greens (kale, collards, etc.)
- 1/2 lemon, juiced
Instructions
- Heat a medium saucepan on medium heat and add ghee. Once melted, add garlic and sauté until just starting to brown.
- Add turmeric and red chili, sizzling for 20 seconds.
- Add chopped carrot, celery, salt, and broth, bringing to a boil.
- Reduce to a simmer and cook for 10 minutes until vegetables soften.
- Add broccoli and greens, simmering for another 10 minutes until tender.
- Turn off heat and blend the soup using an immersion blender.
- Season with lemon juice and adjust salt to taste.
Notes
For a chunkier texture, blend just half of the soup. Season to taste while cooking and feel free to experiment with different greens and spices.
