Description

A quick and flavorful one-pan dish featuring chickpeas, garlic, and wilted spinach, brightened with lemon.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup vegetable broth
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper
  • 1 cup spinach
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté the diced onion until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the chickpeas to the skillet and pour in the vegetable broth.
  5. Allow to simmer for 5-7 minutes.
  6. Stir in the lemon juice, lemon zest, and black pepper.
  7. Cook for an additional 3 minutes.
  8. Add the spinach and stir until wilted.
  9. Season with salt to taste.
  10. Remove from heat and garnish with fresh parsley before serving.

Notes

Best eaten fresh the same day; reheats in a skillet with broth if needed.
