Ingredients

- 1 cup quinoa, rinsed
- 1 cup lentils, rinsed
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Whole wheat wraps or tortillas
- Fresh cilantro or parsley, for garnish
- Tahini sauce (for serving)
Instructions
- In a pot, bring the vegetable broth to a boil. Add the rinsed quinoa and lentils.
- Reduce the heat to low, cover, and simmer for about 20-25 minutes or until both quinoa and lentils are tender.
- In a skillet, sauté the diced onion and garlic until translucent—this takes about 3 minutes.
- Add the cumin, smoked paprika, salt, and pepper to the onion mix. Stir for 1 minute until fragrant.
- Combine the sautéed onions and spices with the quinoa-lentil mix in the pot. Adjust seasoning as needed.
- Let it cool slightly, then assemble in wraps.
Notes
Best eaten fresh the same day. Leftovers can be stored in the fridge for up to 3 days. Wrap fresh each day for the best texture.
