Description

Flavorful and filling quinoa and lentil wraps, perfect for a healthy meal prep.


Ingredients

Scale
  • 1 cup quinoa, rinsed
  • 1 cup lentils, rinsed
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Whole wheat wraps or tortillas
  • Fresh cilantro or parsley, for garnish
  • Tahini sauce (for serving)

Instructions

  1. In a pot, bring the vegetable broth to a boil. Add the rinsed quinoa and lentils.
  2. Reduce the heat to low, cover, and simmer for about 20-25 minutes or until both quinoa and lentils are tender.
  3. In a skillet, sauté the diced onion and garlic until translucent—this takes about 3 minutes.
  4. Add the cumin, smoked paprika, salt, and pepper to the onion mix. Stir for 1 minute until fragrant.
  5. Combine the sautéed onions and spices with the quinoa-lentil mix in the pot. Adjust seasoning as needed.
  6. Let it cool slightly, then assemble in wraps.

Notes

Best eaten fresh the same day. Leftovers can be stored in the fridge for up to 3 days. Wrap fresh each day for the best texture.
