Description

A flavorful and quick salsa verde soup made with shredded chicken, rice, and vibrant spices. Perfect for busy nights!

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 cup salsa verde
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Sauté the onion and garlic until translucent, about 3-4 minutes.
  2. Add the shredded chicken, rice, chicken broth, salsa verde, cumin, salt, and pepper.
  3. Bring to a boil, then reduce the heat and simmer for about 20 minutes.
  4. Serve hot, garnished with cilantro and lime wedges.

Notes

Best eaten fresh the same day; rice thickens overnight but reheats easily with a splash of broth.
