Description

A cozy one-pot tofu noodle soup that’s rich in flavor and quick to prepare, perfect for busy weeknights.


Ingredients

Scale
  • 14 ounces Tofu, cubed
  • 8 ounces Noodles (gluten-free if preferred)
  • 6 cups Vegetable broth
  • 2 medium Carrots, chopped
  • 2 stalks Celery, chopped
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 2 cups Spinach, fresh
  • 2 tablespoons Soy sauce or tamari
  • Spices: Salt, pepper, ginger to taste

Instructions

  1. Chop the tofu into cubes and set aside.
  2. Sauté onions, garlic, carrots, and celery until tender, lightly browning the vegetables.
  3. Add vegetable broth and bring to a boil.
  4. Cook noodles according to package instructions until softened.
  5. Stir in the tofu, soy sauce, and spices to heat through.
  6. Add spinach just before serving for a fresh touch.
  7. Serve hot and enjoy your cozy soup!

Notes

Best eaten fresh the same day, but can be reheated on the stove with a splash of broth if needed. To keep noodles from softening, consider cooking separately when storing leftovers.
