Ingredients

- 14 ounces Tofu, cubed
- 8 ounces Noodles (gluten-free if preferred)
- 6 cups Vegetable broth
- 2 medium Carrots, chopped
- 2 stalks Celery, chopped
- 1 medium Onion, chopped
- 4 cloves Garlic, minced
- 2 cups Spinach, fresh
- 2 tablespoons Soy sauce or tamari
- Spices: Salt, pepper, ginger to taste
Instructions
- Chop the tofu into cubes and set aside.
- Sauté onions, garlic, carrots, and celery until tender, lightly browning the vegetables.
- Add vegetable broth and bring to a boil.
- Cook noodles according to package instructions until softened.
- Stir in the tofu, soy sauce, and spices to heat through.
- Add spinach just before serving for a fresh touch.
- Serve hot and enjoy your cozy soup!
Notes
Best eaten fresh the same day, but can be reheated on the stove with a splash of broth if needed. To keep noodles from softening, consider cooking separately when storing leftovers.
