Ingredients

- 1 pound chicken breast
- 1 cup wild rice
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 cup milk (or dairy-free alternative)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Add the chicken breast, wild rice, onion, carrots, celery, garlic, chicken broth, and thyme to the pot.
- Season with salt and pepper.
- Cook on low for 6-8 hours in a slow cooker, or for about 30 minutes in the Instant Pot.
- Simmer for about 30-40 minutes on the stovetop.
- Remove the chicken, shred it, and return it to the soup.
- Stir in the milk and adjust the seasoning as needed.
- Serve hot, garnished with fresh parsley.
Notes
Best eaten fresh the same day; wild rice softens overnight but reheats on the stove with a splash of broth if needed.
