Ingredients

- 1 pound chicken breast, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups chicken broth
- 1 cup cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- Biscuits or dumplings for serving
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add the onions and garlic, and sauté until fragrant, about 3-4 minutes.
- Add the diced chicken and cook until browned, about 5-7 minutes.
- Stir in the carrots and potatoes, mixing well.
- Pour in chicken broth and bring to a boil.
- Reduce the heat, cover, and simmer for 20 minutes.
- Stir in cream, thyme, salt, and pepper to taste.
- Serve over biscuits or top with dumplings.

Best eaten fresh the same day; cream thickens overnight but reheats slowly with a splash of broth.
