Description

Searing chicken breasts in garlic olive oil and baking them with cherry tomatoes, pitted olives, and crumbled feta creates a tender dish bursting with Mediterranean flavors.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup olives, pitted and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Season chicken breasts with salt, pepper, and dried oregano, then sear in the skillet for 3 to 4 minutes per side until golden brown.
  3. Transfer the seared chicken breasts to a baking dish. Spoon the warm garlic oil from the skillet over top, then layer with halved cherry tomatoes, sliced olives, and crumbled feta cheese.
  4. Bake at 375°F for 12 to 15 minutes until the chicken reaches an internal temperature of 165°F, and the feta softens.
  5. Let rest for 5 minutes, garnish with freshly chopped parsley, and serve warm with a side salad or quinoa.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven with a splash of broth to keep the chicken juicy.
