Description

A bright and zesty chicken and rice soup enriched with lime juice for a fresh flavor.


Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 cup rice
  • 4 cups chicken broth
  • 1 large lime, juiced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the onions and garlic, cooking until soft.
  2. Add the diced chicken and cook until browned.
  3. Stir in the carrots, celery, and rice.
  4. Pour in the chicken broth and bring to a boil.
  5. Lower the heat and simmer for 20 minutes, or until the rice is cooked and the chicken is tender.
  6. Stir in the lime juice and season with salt and pepper.
  7. Serve hot, garnished with fresh cilantro.

Notes

Best eaten fresh the same day but reheats well with a splash of broth if needed.
