Description

A creamy and flavorful chicken soup with sautéed vegetables, finished with spinach and Parmesan, perfect for busy weekdays.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Sauté the onion and garlic until fragrant.
  2. Add chicken breasts and cook until browned on both sides.
  3. Pour in chicken broth and diced tomatoes.
  4. Stir in Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in heavy cream, chopped spinach, and Parmesan cheese.
  8. Cook for an additional 5 minutes until spinach is wilted.
  9. Serve hot.

Notes

Best eaten fresh on the same day; reheats well on the stove with a splash of broth if needed.
